mast8 THE STORY OF LEBLON CACHAÇA | NOT ALL CACHAÇA’S ARE CREATED EQUALLeblon Cachaça stormed into our glasses with the eruption of the World Cup in Brazil this summer. In fact, the drink, Cachaça has been round since the early 1500’s and is the first spirit of the Americas. It is the third most consumed spirit in the world and as a result of the popularity and growth of Brazil, Cachaça is now one of the fastest-growing new spirits internationally. With the growth and fascination with Brazil it is expected to increase significantly in the coming years and especially with the recent 2014 World Cup and the 2016 Olympic Games in Rio de Janeiro.

So What is Cachaça?

First1 200x300 THE STORY OF LEBLON CACHAÇA | NOT ALL CACHAÇA’S ARE CREATED EQUALCachaça is a natural fresh-pressed cane juice from Brazil and according to Brazilian Law, Cachaça can only be made from fresh cane juice, is immediately pressed, fermented, single-distilled and all this can only take place in Brazil. It was first created in 1532 and is sometimes confused for Rum, which was first created in the Caribbean in the 1600’s, one hundred years after Cachaça. Rum is usually made from Molasses, a cooked by-product of sugar production and taste completely different to Cachaça. Cachaca’s has a completely different take to rum, a fresher more lively nose, fruitier flavour profile and is less ‘spicy’ than rum.

 

The Special Brewing Process to Create Cachaça

It is made in small batches via Alambique Pot Stills, as opposed to being mass-produced via continuous industrial operations, like many other Cachaças, which produce a low cost, high yield product that focusing on volume and not quality. The result creates a harsh, unrefined taste and with significantly higher impurities.

The single batch distillation process used by Leblon in Artisanal Copper Alambique Pot Stills results in a great-tasting high-end spirit with delicate, complex, fruity layers of flavours. Every step of the process is meticulously managed, from the hand-cutting of the cane and fermentation, to the small-batch distillation, aging and blending. World-renowned Master Distiller Gilles Merlet, from Cognac, France, manages the entire process and after the Alambique distillation, the Cachaça is rested for up to six months in vintage XO cognac casks. It is then artfully combined and blended to maximize taste complexity and aroma. The result is a very unique spirit, with fruity layers and an ultra-smooth finish.
