Chotto Matte, a new restaurant concept from Kurt Zdesar, the mastermind behind Nobu’s first European restaurant in London, is set to open in September 2013. The three-storey bar and restaurant will offer guests high quality, traditional and fresh Japanese-inspired Nikkei cuisine.

Chotto Matte will be open from 12pm – 1:30am and will seat 180, offering a comprehensive dining experience. There will also be a lounge, a sushi bar and a robata grill, providing alternative services for a range of purposes.

Chotto Matte’s menu has been created to manifest a relaxed, sharing environment. Some of the highlights will include dishes such as: Avocado Tempura served with smoked truffle potato, ikura, shiso and daikon; BBQ Pork Belly served with anticucho, tomato and nashi pear salsa; Grilled Baby Chicken marinated in coriander, garlic, and ginger served with spicy pomegranate salsa; and a selection of fresh, sustainably sourced sushi. The menu will also incorporate a tasting menu of seven courses priced at £40.

Chotto Matte will graciously welcome diners day and night. In addition to the exciting food, guests will also have the luxury of a unique drinks setting in the lounge area, with a large collection of cocktails, fine wines, sakes, shochu and premium Japanese whiskies.

The bold launch of the Soho-based restaurant will coincide with London Fashion Week, and will also involve Japanese painter and graffiti artist , unveiling a large-scale bespoke graphic that will adorn a wall within the restaurant. Chotto Matte’s interiors, designed by Andy Martin, will blend both natural materials such as lava stoneve and burnt cedar with art inspired by Tokyo’s contemporary urban culture.

has experienced significant success in London, as his opening of Nobu became the UK’s first Michelin star awarded Asian restaurant. He was also the creator of Ping Pong, which was named ‘Emerging Concept of the Year’ in 2007.
